Step 1: Prepare the Sweet Base Pit the dates (if they aren't already) and ensure the dried plums are seedless. Place the dates and dried plums into a blender or food processor. Blend them thoroughly until they break down and form a thick, sweet, and sticky paste. This will act as the natural "glue" for your energy balls.
Step 2: Chop the Nuts Take the walnuts and peanuts and chop them finely. You want them small enough to mix easily into the balls, but chunky enough to provide a nice textural crunch against the soft fruit base.
Step 3: Combine the Ingredients In a mixing bowl, combine the sticky date and plum paste with the finely chopped nuts. Add the cocoa powder to the bowl. Mix and knead everything together (using your hands is usually easiest!) until the nuts and cocoa are evenly distributed and you have a uniform, dough-like texture.
Step 4: Roll the Bites Take small, even portions of the chocolate-nut mixture and roll them between the palms of your hands to form smooth, bite-sized balls.
Step 5: The Coconut Coating Pour the coconut flakes onto a shallow plate. Roll each formed ball in the coconut flakes until the outside is completely and evenly coated.
Chill and Serve Place the coated truffles on a tray and refrigerate them for about 30 minutes so they firm up and hold their shape beautifully. Serve and enjoy
